  1. 1. Soak the gelatin in cold water.
  2. 2. Crumble the marzipan base into small pieces.
  3. 3. Take 4 to 5 tablespoons of the milk (lukewarm is best).
  4. 4. Puree the marzipan pieces with these milk portions in the blender until smooth.
  5. 5. Bring the remaining milk to a boil in a pot.
  6. 6. Whisk the sugar and egg yolks in a warm water bath until light and creamy.
  7. 7. Stir in the hot milk while continuing to stir.
  8. 8. Squeeze the soaked gelatin well to remove excess water.
  9. 9. Add the drained gelatin to the milk-egg yolk mixture.
  10. 10. Add the marzipan cream.
  11. 11. Stir everything until a homogeneous, smooth cream has formed.
  12. 12. Let the mixture cool down well.
  13. 13. Whip the cream stiff in the meantime.
  14. 14. Gently fold the whipped cream into the cooled marzipan mixture.
  15. 15. Fill the marzipan mousse into four glasses.
  16. 16. Place the glasses in the refrigerator overnight.
  17. 17. Grate the chocolate into fine shavings.
  18. 18. Make chocolate shavings by dragging a peeler (optional).
  19. 19. Garnish the cold mousse with the chocolate shavings.
