🍽️ Marzipan Cream

Ingredients
- 6 leaves gelatin
- 100 g marzipan paste
- 200 ml milk
- 80 g sugar
- 3 egg yolks
- 250 ml whipping cream
- 40 g dark chocolate
Instructions
- 1. Soak the gelatin in cold water.
- 2. Crumble the marzipan base into small pieces.
- 3. Take 4 to 5 tablespoons of the milk (lukewarm is best).
- 4. Puree the marzipan pieces with these milk portions in the blender until smooth.
- 5. Bring the remaining milk to a boil in a pot.
- 6. Whisk the sugar and egg yolks in a warm water bath until light and creamy.
- 7. Stir in the hot milk while continuing to stir.
- 8. Squeeze the soaked gelatin well to remove excess water.
- 9. Add the drained gelatin to the milk-egg yolk mixture.
- 10. Add the marzipan cream.
- 11. Stir everything until a homogeneous, smooth cream has formed.
- 12. Let the mixture cool down well.
- 13. Whip the cream stiff in the meantime.
- 14. Gently fold the whipped cream into the cooled marzipan mixture.
- 15. Fill the marzipan mousse into four glasses.
- 16. Place the glasses in the refrigerator overnight.
- 17. Grate the chocolate into fine shavings.
- 18. Make chocolate shavings by dragging a peeler (optional).
- 19. Garnish the cold mousse with the chocolate shavings.
