🍰 Marzipan Quark Wreaths

Ingredients
- 150 g wheat wholemeal flour
- 150 g spelt flour
- 3 tsp baking powder
- 75 g sugar (4 level tbsp)
- 1 pinch salt
- 150 g low-fat quark
- 100 ml milk (1.5% fat)
- 80 ml rapeseed oil
- 100 g marzipan base
- 25 g chopped pistachio kernels (2 tbsp)
- 1 egg yolk
Instructions
- 1. Mix both types of flour and the baking powder in a large mixing bowl.
- 2. Add sugar, salt, quark (a type of fresh curd cheese), milk, and oil to the bowl.
- 3. Beat everything with the dough hooks of a hand mixer until you have a smooth dough.
- 4. Take the dough out of the bowl and place it on a lightly floured work surface.
- 5. Roughly chop the marzipan.
- 6. Add the chopped marzipan pieces and the pistachios to the dough.
- 7. Knead the ingredients well into the dough by hand.
- 8. Divide the dough into 20 equal portions.
- 9. Shape each portion into a thin roll about 30 centimeters long.
- 10. Take two rolls at a time and loosely twist them around each other several times.
- 11. This creates a long cord.
- 12. Shape each cord into a wreath.
- 13. Press the ends of the cord together at the seams so the wreath holds its shape.
- 14. Line two baking sheets with baking paper.
- 15. Distribute the wreaths evenly on the sheets.
- 16. Separate one egg into yolk and white.
- 17. Use the egg white for something else.
- 18. Whisk the egg yolk with one tablespoon of water.
- 19. Brush the wreaths with the egg yolk and water mixture.
- 20. Preheat the oven to 180 degrees Celsius conventional heat (160 degrees Celsius fan-forced or gas level 2-3).
- 21. Bake the wreaths one after the other on the lowest rack.
- 22. Bake for about 15 minutes.
- 23. Take the wreaths out of the oven.
- 24. Let them cool completely on a wire rack.
