🍽️ Crunchy Marzipan-Coconut Squares

Ingredients
- 100 g Marzipan base
- 50 g citron peel
- 1 egg white
- 100 g coconut flakes
- 50 g sugar
- 1 pinch salt
- 2 tbsp lemon juice
- 2 tsp grated lemon zest

Instructions
- 1. Preheat the oven to 140 degrees Celsius fan-forced.
- 2. Line a baking tray with baking paper.
- 3. Whisk the egg whites in a bowl until stiff.
- 4. Gradually add a pinch of salt, sugar, lemon juice, and lemon zest.
- 5. Continue stirring until the egg white foam is very firm.
- 6. Finely crush the marzipan paste.
- 7. Mix the crushed marzipan with the coconut flakes and candied lemon peel.
- 8. Gently fold the marzipan-coconut mixture into the egg white foam.
- 9. Spread the mixture about 2 centimeters thick onto the baking paper using a wet palette or spatula.
- 10. Whisk the egg whites with the sugar again until very stiff.
- 11. Spread this egg white mixture evenly over the dough.
- 12. Sprinkle the surface with shredded coconut.
- 13. Bake the squares on the middle rack for approx. 25 minutes.
- 14. Make sure they do not turn brown.
- 15. Remove the tray from the oven.
- 16. Cut the dough into small squares immediately.
