  1. 1. Preheat the oven to 140 degrees Celsius fan-forced.
  2. 2. Line a baking tray with baking paper.
  3. 3. Whisk the egg whites in a bowl until stiff.
  4. 4. Gradually add a pinch of salt, sugar, lemon juice, and lemon zest.
  5. 5. Continue stirring until the egg white foam is very firm.
  6. 6. Finely crush the marzipan paste.
  7. 7. Mix the crushed marzipan with the coconut flakes and candied lemon peel.
  8. 8. Gently fold the marzipan-coconut mixture into the egg white foam.
  9. 9. Spread the mixture about 2 centimeters thick onto the baking paper using a wet palette or spatula.
  10. 10. Whisk the egg whites with the sugar again until very stiff.
  11. 11. Spread this egg white mixture evenly over the dough.
  12. 12. Sprinkle the surface with shredded coconut.
  13. 13. Bake the squares on the middle rack for approx. 25 minutes.
  14. 14. Make sure they do not turn brown.
  15. 15. Remove the tray from the oven.
  16. 16. Cut the dough into small squares immediately.
