  2. 2. Use a small, sharp knife to cut a cross into the shell of each chestnut.
  3. 3. Place the chestnuts in the preheated oven.
  4. 4. Roast the chestnuts for about 40 minutes.
  5. 5. Turn the chestnuts occasionally during roasting so they cook evenly.
  6. 6. Remove the chestnuts from the oven.
  7. 7. Peel the shells off the chestnuts while they are still hot.
  8. 8. Peel the onions.
  9. 9. Peel the apples.
  10. 10. Remove the core from the apples.
  11. 11. Finely chop the onions.
  12. 12. Finely chop the apples.
  13. 13. Heat the butter in a pan.
  14. 14. Sauté the onions in the hot butter.
  15. 15. Add the chopped apples to the pan.
  16. 16. Continue to sauté the apples with the onions.
  17. 17. Season the mixture with salt.

  19. 19. Add thyme to season the mixture.
  20. 20. Season the stuffing to taste with salt and pepper.
  21. 21. Set aside the prepared chestnuts.
  22. 22. Mix the chestnuts into the apple and onion mixture.

  24. 24. Let the stuffing cool until it is lukewarm.
  25. 25. Use the cooled stuffing to fill the turkey.
