🍰 Chestnut cream with Amarena cherries and whipped cream (Monte bianco)

Ingredients
- 600 g chestnuts (Maroni)
- 500 ml milk
- 1 vanilla pod
- 100 g powdered sugar
- 30 g cocoa powder
- 20 ml rum
- 200 ml whipping cream
- 1 jar amarena cherries (approx. 250 g)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Lightly score the chestnuts with a sharp knife.
- 3. Place the chestnuts on a baking tray lined with baking paper.
- 4. Roast the chestnuts in the preheated oven for 15 to 20 minutes.
- 5. Remove the chestnuts from the oven once the shells start to split open.
- 6. Let the chestnuts cool down briefly, but peel them while they are still warm.
- 7. Set aside six whole chestnuts to use for decoration later.
- 8. Place the peeled chestnuts into a pot.
- 9. Pour the milk and a vanilla pod cut lengthwise over the chestnuts.
- 10. Let the mixture simmer gently for about 30 minutes until soft.
- 11. Remove the vanilla pod from the pot and discard it.
- 12. Take the chestnuts out of the milk.
- 13. Press the chestnuts through a potato ricer into a bowl.
- 14. Stir in the powdered sugar, cocoa powder, and 2 cl of rum into the chestnut puree.
- 15. Add a little of the warm vanilla milk gradually.
- 16. Mix everything until you have a smooth and creamy texture.
- 17. Spoon the chestnut cream into one or several serving bowls.
- 18. Whip the cream until it is semi-stiff.
- 19. Place a dollop of whipped cream on top of the chestnut cream.
- 20. Decorate the dessert with the reserved chestnuts and Amarena cherries.
- 21. Serve the dessert immediately.
