🍽️ Creamy Chestnut Jam with Chocolate and Vanilla

Ingredients
- 500 g chestnuts
- 1 vanilla pod
- 250 g raw cane sugar
- 100 g dark chocolate coating (min. 60 % cocoa)
Instructions
- 1. Make a cross-shaped cut on the chestnuts.
- 2. Place the chestnuts in boiling water and blanch them for 5 minutes over high heat.
- 3. Remove the chestnuts, shock them in cold water, and let them drain.
- 4. Peel the chestnuts.
- 5. Place the peeled chestnuts in a pot and cover them with water.
- 6. Cook the chestnuts over medium heat for about 30 minutes with the lid slightly ajar until soft.
- 7. The chestnuts should be soft enough to almost crush easily.
- 8. Drain the cooking water and save it in a container.
- 9. Caramelize the whole cane sugar over medium heat until golden brown.
- 10. Add the slit vanilla pod to the caramel.
- 11. Deglaze the caramel with 100 ml of the reserved chestnut cooking water.
- 12. Add the chestnuts and let the mixture simmer for 10 minutes.
- 13. Remove the vanilla pod from the mixture.
- 14. Puree the chestnut mixture until smooth.
- 15. Finely chop the dark chocolate couverture.
- 16. Stir the chocolate into the chestnut mixture until it has melted.
- 17. Rinse the jars with hot water to sterilize them.
- 18. Fill the jars with the chestnut jam.
- 19. Seal the jars tightly.
- 20. Let the jam cool down completely in the jars.
