  1. 1. Make a cross-shaped cut on the chestnuts.
  2. 2. Place the chestnuts in boiling water and blanch them for 5 minutes over high heat.
  3. 3. Remove the chestnuts, shock them in cold water, and let them drain.
  4. 4. Peel the chestnuts.
  5. 5. Place the peeled chestnuts in a pot and cover them with water.
  6. 6. Cook the chestnuts over medium heat for about 30 minutes with the lid slightly ajar until soft.
  7. 7. The chestnuts should be soft enough to almost crush easily.
  8. 8. Drain the cooking water and save it in a container.
  9. 9. Caramelize the whole cane sugar over medium heat until golden brown.
  10. 10. Add the slit vanilla pod to the caramel.
  11. 11. Deglaze the caramel with 100 ml of the reserved chestnut cooking water.
  12. 12. Add the chestnuts and let the mixture simmer for 10 minutes.
  13. 13. Remove the vanilla pod from the mixture.
  14. 14. Puree the chestnut mixture until smooth.
  15. 15. Finely chop the dark chocolate couverture.
  16. 16. Stir the chocolate into the chestnut mixture until it has melted.
  17. 17. Rinse the jars with hot water to sterilize them.
  18. 18. Fill the jars with the chestnut jam.
  19. 19. Seal the jars tightly.
  20. 20. Let the jam cool down completely in the jars.
