🍽️ Moroccan Beef with Dried Fruits

Ingredients
- 400 g lean beef
- 8 dried plums
- 4 dried apricots
- 2 onions
- 5 carrots
- 3 tbsp olive oil
- 300 ml meat broth
- salt
- pepper (from the mill)
- 1 bunch fresh cilantro
- 500 g fine couscous (pre-cooked)
Instructions
- 1. Cut the beef into large cubes.
- 2. Place the dried fruits in a bowl and cover them with warm water.
- 3. Let the fruits soak in the water for 30 minutes.
- 4. Drain the water and let the fruits drip dry in a sieve.
- 5. Peel the onions and cut them in half.
- 6. Cut the onion halves into thin strips.
- 7. Peel the carrots.
- 8. Cut the carrots lengthwise into two halves.
- 9. Quarter the carrot halves.
- 10. Heat the oil in a casserole pot.
- 11. Fry the meat in batches until browned.
- 12. Season the meat with salt and pepper.
- 13. Add the onions, carrots, and drained dried fruits to the meat.
- 14. Stir everything well.
- 15. Sauté the vegetables and fruits briefly.
- 16. Deglaze the dish with beef broth.
- 17. Cover the pot.
- 18. Simmer the dish on low heat for about 45 minutes.
- 19. Pick the coriander leaves off the stems.
- 20. Wash the coriander leaves.
- 21. Shake the leaves dry.
- 22. Chop the coriander leaves finely.
- 23. Stir the chopped coriander into the beef dish.
- 24. Let the dish rest for 5 minutes.
- 25. Prepare the couscous according to the package instructions.
- 26. Serve the beef dish together with the couscous.
