🍰 Marble Cake with Sour Cherries

Ingredients
- 300 g sour cherries
- 155 g yogurt butter
- 20 g whole wheat breadcrumbs (2 tbsp)
- 150 g coconut blossom sugar
- 1 pinch salt
- 3 eggs
- 200 g spelt flour Type 1050
- 50 g whole wheat flour
- 2 tsp baking powder
- 0.5 tsp cinnamon
- 50 ml buttermilk
- 20 g cocoa powder (unsweetened; 1 heaped tbsp)
- powdered sugar from birch sugar (to taste)
Instructions
- 1. Thoroughly wash the sour cherries under running water.
- 2. Remove the pits from the cherries.
- 3. Let the pitted cherries drain well in a sieve.
- 4. Grease a loaf pan with one teaspoon of butter.
- 5. Coat the greased pan with breadcrumbs.
- 6. Add the remaining butter, coconut blossom sugar, and a pinch of salt to a large mixing bowl.
- 7. Beat the butter-sugar mixture with an electric hand mixer until fluffy.
- 8. Stir the eggs into the butter mixture one by one.
- 9. Mix both types of flour, baking powder, and cinnamon in a separate bowl.
- 10. Alternately stir in the flour mixture and the buttermilk into the butter-egg mixture.
- 11. Divide the finished dough into two equal halves.
- 12. Stir the cocoa powder into one of the two dough halves.
- 13. Place half of the dark dough into the prepared loaf pan.
- 14. Place half of the light dough on top of the dark dough.
- 15. Smooth the surface of the dough with a spatula.
- 16. Sprinkle half of the sour cherries evenly over the dough.
- 17. Add the remaining light and dark dough in layers on top.
- 18. Distribute the remaining sour cherries evenly on the top layer of dough.
- 19. Preheat the oven to 180 degrees Celsius conventional heat.
- 20. Bake the cake for about 65 minutes in the preheated oven.
- 21. Remove the cake from the oven after the baking time.
- 22. Let the cake cool in the pan for ten minutes.
- 23. Carefully turn the cake out onto a cooling rack.
- 24. Turn the cake over so it can cool completely.
- 25. Dust the cooled cake with powdered sugar if desired.
- 26. Cut the cake into slices and serve.
