🍰 Marble Cake with Apple Sauce

Ingredients
- 0.5 vanilla pod
- 105 ml neutral vegetable oil
- 0.5 tsp turmeric powder
- 0.5 organic lemon (juice and zest)
- 200 g apple sauce (unsweetened)
- 80 g coconut blossom sugar
- 150 ml milk
- 4 eggs
- 360 g spelt wholemeal flour
- 50 g cornstarch
- 10 g baking powder (1 tbsp)
- 3 tbsp cocoa powder (45 g, highly defatted)
- 4 tbsp sparkling mineral water
Instructions
- 1. Cut the vanilla pod in half lengthwise and scrape out the seeds.
- 2. Whisk 100 ml of oil with the vanilla seeds, turmeric, lemon juice, lemon zest, apple sauce, and coconut blossom sugar.
- 3. Stir in the milk and eggs slowly.
- 4. Sift 350 g of flour, starch, and baking powder into a separate bowl and mix the dry ingredients well.
- 5. Quickly fold the flour mixture into the liquid mixture.
- 6. Remove about one-third of the batter and stir in cocoa powder with mineral water.
- 7. Grease the Bundt pan with the remaining oil and dust it with the remaining flour.
- 8. Pour the light batter into the pan.
- 9. Add the dark chocolate batter on top.
- 10. Use a fork to draw circular patterns through the batter to create the marble effect.
- 11. Bake the cake in the preheated oven at 200 °C (180 °C fan or gas mark 3) for 60 minutes.
- 12. Perform the skewer test to check if the cake is fully baked.
- 13. Turn the cake out onto a wire rack and let it cool for 10 minutes.
