🍰 Marble Cake with Applesauce

Ingredients
- 0.5 vanilla pod
- 105 ml neutral vegetable oil
- 0.5 pinch turmeric powder
- 0.5 organic lemon (juice and zest)
- 200 g apple sauce (unsweetened)
- 80 g coconut blossom sugar
- 150 ml milk
- 4 eggs
- 360 g spelt whole wheat flour
- 50 g cornstarch
- 10 g baking powder (1 tbsp)
- 3 tbsp cocoa powder (45 g, strongly defatted)
- 4 tbsp sparkling mineral water
Instructions
- 1. Split the vanilla pod lengthwise.
- 2. Scrape out the small seeds from the pod.
- 3. Whisk 100 milliliters of oil with the vanilla seeds.
- 4. Add turmeric, lemon juice, and lemon zest to the oil mixture.
- 5. Stir in the applesauce and coconut blossom sugar.
- 6. Add the milk gradually and stir it in.
- 7. Add the eggs and stir them in.
- 8. Sift 350 grams of flour, starch, and baking powder together into a separate bowl.
- 9. Mix the dry ingredients well together.
- 10. Quickly stir the dry mixture into the liquid batter.
- 11. Set aside about one-third of the finished batter.
- 12. Stir cocoa powder and mineral water into the reserved portion of the batter.
- 13. Grease the Bundt pan with the remaining oil.
- 14. Dust some flour into the pan if necessary.
- 15. Fill the light (vanilla-colored) batter into the pan.
- 16. Add the dark (chocolate) batter on top.
- 17. Swirl the chocolate batter into the light batter using a fork in a circular motion.
- 18. Preheat the oven to 200 degrees Celsius (180 degrees Celsius fan-assisted; Gas: Level 3).
- 19. Bake the cake for 60 minutes.
- 20. Perform the skewer test to check the baking time.
- 21. Invert the marble cake onto a wire rack.
- 22. Let the cake cool for 10 minutes.
