🍰 Marbled Muffins

Ingredients
- 275 g flour
- 2.5 tsp baking powder
- 0.5 tsp baking soda
- 60 g chopped almond kernels (or hazelnuts)
- 1 egg
- 140 g white sugar
- 125 g butter
- 275 g buttermilk
- 2 tbsp cocoa powder
- 3 tbsp milk
- 1 tsp grated lemon zest
- 3 tbsp chopped almond kernels (for sprinkling)
Instructions
- 1. Line a muffin tin with paper liners.
- 2. Crack an egg and whisk it.
- 3. Stir in sugar, butter, and buttermilk.
- 4. Mix flour, baking powder, baking soda, and almonds in a separate bowl.
- 5. Add the flour mixture to the egg mixture and stir well.
- 6. Divide the batter into two equal parts and place them in two separate bowls.
- 7. Stir cocoa powder and a little milk into the batter in one bowl.
- 8. Add the lemon zest to the other bowl with the light batter.
- 9. Place one tablespoon of light batter into each muffin cup.
- 10. Place one tablespoon of dark batter on top of the light batter.
- 11. Repeat steps 9 and 10 until the batter is used up.
- 12. Briefly swirl the batters in each cup with a fork to create the marble effect.
- 13. Sprinkle the muffins with chopped almonds.
- 14. Bake the muffins at 180 °C (convection 160 °C) on the middle rack for 20 to 25 minutes.
