🍽️ Star-Shaped Jam Sandwich Cookies

Ingredients
- 425 g flour
- 100 g finely ground almond kernels
- 250 g cold butter
- 125 g fine sugar
- 1 egg
- 1 tbsp whipping cream
- flour (for working)
- 250 g jelly (e.g. redcurrant or cherry)
- 10 ml rum
- powdered sugar (for dusting)
Instructions
- 1. Put the flour and ground almonds into a bowl.
- 2. Add the butter pieces, sugar, egg, and cream.
- 3. Quickly knead the ingredients together into a soft shortcrust dough.
- 4. Wrap the dough tightly in plastic wrap.
- 5. Place the dough in the refrigerator for about 1 hour to rest.
- 6. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 7. Lightly dust a work surface with flour.
- 8. Roll out the dough on the floured surface to about 3 millimeters thickness.
- 9. Cut out star shapes from the dough.
- 10. Take half of the stars and cut a small hole in the center of each.
- 11. Line the baking sheets with baking paper.
- 12. Place all the dough stars side by side on the prepared trays.
- 13. Bake the cookies in the preheated oven for about 8 to 10 minutes until golden yellow.
- 14. Mix the jam jelly with the rum in a small bowl.
- 15. Remove the finished cookies from the tray while still hot.
- 16. Place a small dollop of the jam mixture on each cookie without a hole.
- 17. Gently press a cookie with a hole on top to form a sandwich.
- 18. Lightly dust the finished cookies with powdered sugar.
- 19. Place the cookies on a cooling rack and let them dry well.
