🍽️ Raspberry Jam Cookies with Nut and Lemon Flavor

Ingredients
- 420 g flour
- 210 g sugar
- 2 tsp vanilla sugar
- 1 pinch salt
- 125 g ground hazelnuts
- 0.5 untreated lemon
- 250 g butter
- 2 small eggs
- 200 g raspberry jam
- powdered sugar (for dusting)
Instructions
- 1. Turn on the oven to 170 degrees Celsius with fan setting.
- 2. Let the oven preheat completely.
- 3. Take a large bowl.
- 4. Add flour to the bowl.
- 5. Add sugar to the bowl.
- 6. Add vanilla sugar to the bowl.
- 7. Add a pinch of salt to the bowl.
- 8. Add the hazelnuts to the bowl.
- 9. Mix all dry ingredients in the bowl.
- 10. Grate the lemon zest finely.
- 11. Add the lemon zest to the flour mixture.
- 12. Cut the butter into small cubes.
- 13. Chop the butter cubes roughly into the flour mixture.
- 14. Add the eggs to the mixture.
- 15. Knead everything quickly into a smooth dough.
- 16. Wrap the dough in plastic wrap.
- 17. Put the dough in the refrigerator for at least 30 minutes.
- 18. Line a baking sheet with baking paper.
- 19. Take the dough out of the refrigerator.
- 20. Divide the dough into portions.
- 21. Roll out one portion of dough to about 0.3 centimeters thickness.
- 22. Cut circles out of the dough.
- 23. Cut rings out of the dough.
- 24. Make sure you have equal numbers of circles and rings.
- 25. Cut out a small star from each ring.
- 26. Save the small stars.
- 27. Place the cookies on the baking sheet.
- 28. Bake the cookies for 8 to 10 minutes.
- 29. Take the cookies out of the oven when they are light yellow.
- 30. Place the cookies on a wire rack.
- 31. Let the cookies cool on the wire rack.
- 32. Take a pot.
- 33. Add the raspberry jam to the pot.
- 34. Heat the jam in the pot.
- 35. Take a cookie circle.
- 36. Spread jam on the bottom of the circle.
- 37. Place a cookie ring on top of the jam-covered circle.
- 38. Repeat this for all cookies.
- 39. Let the cookies cool.
- 40. Let the cookies dry for 1 to 2 hours.
- 41. Take powdered sugar.
- 42. Dust the finished cookies with powdered sugar.
