Ingredients
- 200 g flour
- 100 g powdered sugar
- 2 vanilla pods (pulp)
- 125 g cold butter
- 1 pinch salt
- 100 g apricot jam
- powdered sugar (for dusting)
Instructions
- 1. Put flour, powdered sugar, a pinch of salt, and vanilla seeds into a bowl.
- 2. Quickly work the finely chopped butter into the mixture using your hands or a mixer.
- 3. Knead the dough until it is smooth and pliable.
- 4. Shape the dough into a ball.
- 5. Wrap the dough ball tightly in plastic wrap.
- 6. Place the dough in the refrigerator for about 30 minutes to firm up.
- 7. Take the dough out of the fridge.
- 8. Divide the dough into portions.
- 9. Place one portion between two layers of plastic wrap.
- 10. Roll the dough on a work surface to a thickness of about 3 millimeters.
- 11. Cut out the cookie shapes using a square cutter (approx. 3 x 3 cm).
- 12. Take half of the cookies.
- 13. Cut out the centers of these cookies using a small star-shaped cutter.
- 14. Place all cookies on a baking sheet lined with baking paper.
- 15. Put the tray in the refrigerator for about 1 hour.
- 16. Preheat the oven.
- 17. Set the middle rack.
- 18. Set the temperature to 180 degrees Celsius fan-forced (or 200 degrees Celsius conventional top/bottom heat).
- 19. Bake the cookies for about 10 to 12 minutes until golden brown.
- 20. Remove the cookies from the oven.
- 21. Let the cookies cool completely on the baking sheet.
- 22. Gently warm the apricot jam.
- 23. Push the jam through a fine sieve to remove any lumps.
- 24. Spread the jam onto the cookies without the star cut-out.
- 25. Top them with the remaining cookies (with the star cut-out).
- 26. Finally, dust the finished cookies lightly with powdered sugar.
