  1. 1. Put flour, powdered sugar, a pinch of salt, and vanilla seeds into a bowl.
  2. 2. Quickly work the finely chopped butter into the mixture using your hands or a mixer.
  3. 3. Knead the dough until it is smooth and pliable.
  4. 4. Shape the dough into a ball.
  5. 5. Wrap the dough ball tightly in plastic wrap.
  6. 6. Place the dough in the refrigerator for about 30 minutes to firm up.
  7. 7. Take the dough out of the fridge.
  8. 8. Divide the dough into portions.
  9. 9. Place one portion between two layers of plastic wrap.
  10. 10. Roll the dough on a work surface to a thickness of about 3 millimeters.
  11. 11. Cut out the cookie shapes using a square cutter (approx. 3 x 3 cm).
  12. 12. Take half of the cookies.
  13. 13. Cut out the centers of these cookies using a small star-shaped cutter.
  14. 14. Place all cookies on a baking sheet lined with baking paper.
  15. 15. Put the tray in the refrigerator for about 1 hour.
  16. 16. Preheat the oven.
  17. 17. Set the middle rack.
  18. 18. Set the temperature to 180 degrees Celsius fan-forced (or 200 degrees Celsius conventional top/bottom heat).
  19. 19. Bake the cookies for about 10 to 12 minutes until golden brown.
  20. 20. Remove the cookies from the oven.
  21. 21. Let the cookies cool completely on the baking sheet.
  22. 22. Gently warm the apricot jam.
  23. 23. Push the jam through a fine sieve to remove any lumps.
  24. 24. Spread the jam onto the cookies without the star cut-out.
  25. 25. Top them with the remaining cookies (with the star cut-out).
  26. 26. Finally, dust the finished cookies lightly with powdered sugar.
