🍽️ Crispy Plum Jam Pockets

Ingredients
- 500 g flour
- 250 g butter
- 20 g yeast
- 8 tbsp lukewarm milk
- 1 egg
- 2 tbsp sugar
- plum jam or prune jam
- 1 egg yolk
Instructions
- 1. Slightly warm up 4 tablespoons of milk.
- 2. Stir the yeast into the lukewarm milk until it is completely dissolved.
- 3. Add flour and sugar to a large bowl and mix them together.
- 4. Make a well in the center of the flour mixture.
- 5. Pour the yeast-milk mixture into the well.
- 6. Take some flour from the edges and mix it with the yeast liquid to form a small pre-dough.
- 7. Let the pre-dough rest in a warm place until it has doubled in volume.
- 8. Warm the butter and the remaining milk together until they are lukewarm.
- 9. Add the lukewarm butter-milk mixture and an egg to the pre-dough.
- 10. Knead everything together into a smooth dough.
- 11. Let the finished dough rise in a warm place for 2 hours.
- 12. Roll out the dough on a floured surface relatively thin.
- 13. Cut the dough into regular triangles with a side length of about 10 to 15 centimeters.
- 14. Let the cut triangles rise for a short time.
- 15. Place a dollop of plum jam in the center of each triangle.
- 16. Fold the two outer corners of the triangle over the jam towards the center.
- 17. Whisk an egg yolk and brush the pastry pockets with it.
- 18. Place the pastry pockets on a greased baking sheet.
- 19. Preheat the oven to 180 degrees.
- 20. Bake the pastry pockets in the preheated oven for 25 minutes until golden brown.
