  1. 1. Slightly warm up 4 tablespoons of milk.
  2. 2. Stir the yeast into the lukewarm milk until it is completely dissolved.
  3. 3. Add flour and sugar to a large bowl and mix them together.
  4. 4. Make a well in the center of the flour mixture.
  5. 5. Pour the yeast-milk mixture into the well.
  6. 6. Take some flour from the edges and mix it with the yeast liquid to form a small pre-dough.
  7. 7. Let the pre-dough rest in a warm place until it has doubled in volume.
  8. 8. Warm the butter and the remaining milk together until they are lukewarm.
  9. 9. Add the lukewarm butter-milk mixture and an egg to the pre-dough.
  10. 10. Knead everything together into a smooth dough.
  11. 11. Let the finished dough rise in a warm place for 2 hours.
  12. 12. Roll out the dough on a floured surface relatively thin.
  13. 13. Cut the dough into regular triangles with a side length of about 10 to 15 centimeters.
  14. 14. Let the cut triangles rise for a short time.
  15. 15. Place a dollop of plum jam in the center of each triangle.
  16. 16. Fold the two outer corners of the triangle over the jam towards the center.
  17. 17. Whisk an egg yolk and brush the pastry pockets with it.
  18. 18. Place the pastry pockets on a greased baking sheet.
  19. 19. Preheat the oven to 180 degrees.
  20. 20. Bake the pastry pockets in the preheated oven for 25 minutes until golden brown.
