🍰 Fluffy Jam Pancakes

Ingredients
- 320 ml Milk (1.5 % fat)
- 150 g Flour
- 2 Eggs
- 15 g Vanilla sugar
- 1 Pinch Salt
- 4 Tbsp Butter
- 8 tsp Jam (e.g. raspberry, strawberry)
- Sugar
Instructions
- 1. Pour the milk into a large bowl.
- 2. Add the flour, eggs, vanilla sugar, and a pinch of salt.
- 3. Whisk the mixture until it is completely smooth and free of lumps.
- 4. Let the batter rest in a quiet place for about 20 minutes.
- 5. Heat one teaspoon of butter in a frying pan over medium heat.
- 6. Pour a small ladle of batter into the hot pan.
- 7. Cook the pancake for about 1 to 2 minutes on the first side until golden brown.
- 8. Flip the pancake and cook for another 1 to 2 minutes on the other side until golden brown.
- 9. Place the finished pancake in the preheated oven to keep it warm.
- 10. Set the oven temperature to 80 degrees Celsius.
- 11. If your oven has a fan setting, set it to 60 degrees Celsius.
- 12. If you are using a gas oven, set it to the lowest setting.
- 13. Repeat the process with the remaining butter and batter.
- 14. Bake a total of 8 pancakes.
- 15. Take the pancakes out of the oven.
- 16. Place a dollop of jam on each pancake.
- 17. Sprinkle with a little sugar if desired.
- 18. Serve the pancakes immediately.
