  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Separate the eggs. Beat the egg whites together with the lemon juice until stiff.
  3. 3. Stir in the sugar until the mixture is stiff again.
  4. 4. Mix the flour with the cornstarch in a separate bowl.
  5. 5. Add the egg yolks to the egg whites.
  6. 6. Sprinkle the flour mixture over the top and gently fold it in to keep the batter airy.
  7. 7. Spread the batter onto a baking sheet lined with baking paper and smooth it out.
  8. 8. Bake the sponge cake on the middle rack in the hot oven for 10 to 12 minutes.
  9. 9. Generously sprinkle sugar over a large kitchen towel.
  10. 10. Carefully turn the hot sponge cake out onto the prepared towel.
  11. 11. Brush the baking paper with cold water to make it easier to remove.
  12. 12. Carefully peel the baking paper off the cake base.
  13. 13. Use the kitchen towel to roll up the sponge cake immediately.
  14. 14. Allow the roll to cool down.
  15. 15. Carefully unroll the completely cooled sponge cake.
  16. 16. Spread the surface evenly with jam.
  17. 17. Roll the sponge cake up again.
  18. 18. Slice the roll and serve.
