🍽️ Classic Jam Swiss Roll

Ingredients
- 5 Eggs
- 1 tbsp Lemon juice
- 125 g Sugar
- 100 g Flour
- 50 g Cornstarch
- Sugar (for dusting)
- 200 g Jam (e.g. strawberry)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Separate the eggs. Beat the egg whites together with the lemon juice until stiff.
- 3. Stir in the sugar until the mixture is stiff again.
- 4. Mix the flour with the cornstarch in a separate bowl.
- 5. Add the egg yolks to the egg whites.
- 6. Sprinkle the flour mixture over the top and gently fold it in to keep the batter airy.
- 7. Spread the batter onto a baking sheet lined with baking paper and smooth it out.
- 8. Bake the sponge cake on the middle rack in the hot oven for 10 to 12 minutes.
- 9. Generously sprinkle sugar over a large kitchen towel.
- 10. Carefully turn the hot sponge cake out onto the prepared towel.
- 11. Brush the baking paper with cold water to make it easier to remove.
- 12. Carefully peel the baking paper off the cake base.
- 13. Use the kitchen towel to roll up the sponge cake immediately.
- 14. Allow the roll to cool down.
- 15. Carefully unroll the completely cooled sponge cake.
- 16. Spread the surface evenly with jam.
- 17. Roll the sponge cake up again.
- 18. Slice the roll and serve.
