  1. 1. Thoroughly wash the zucchini and bell peppers and remove any tough parts. Slice the green zucchini into round discs. Cut the bell peppers and yellow zucchini into thin strips.
  2. 2. Heat the oil in a large pan and briefly fry the vegetables together with the cumin in several small batches. Return the fried vegetables to the pan. Season the mixture generously with lime juice, salt, and pepper.
  3. 3. Rinse the herbs under running water and pat them dry. Cut the chives into fine rings and finely chop the parsley. You can serve the vegetables either warm or cold.
