  1. 1. Peel the pineapple and cut off five thick slices.
  2. 2. Remove the hard core from the center of the slices.
  3. 3. Cut the remaining pineapple pieces into small bites.
  4. 4. Wash the meat and pat it dry with a kitchen towel.
  5. 5. Cut the meat into thin strips.
  6. 6. Mix salt, flour, pepper, vinegar, soy sauce, and pineapple juice in a bowl.
  7. 7. Place the meat in the marinade and toss it well.
  8. 8. Cover the bowl and place it in the refrigerator for one hour.
  9. 9. Slice the chili peppers into thin rings.
  10. 10. Slice the leek into thin rounds.
  11. 11. Heat the oil in a frying pan or wok.
  12. 12. Add the marinated meat to the hot pan.
  13. 13. Pour the remaining marinade liquid over the meat.
  14. 14. Add the chili rings and the leek.
  15. 15. Cover the pan with a lid.
  16. 16. Simmer the meat over medium heat.
  17. 17. Stir the dish well.
  18. 18. Add the pineapple pieces.
  19. 19. Let the dish simmer for another five minutes over medium heat.
  20. 20. Keep the lid off during this time.
  21. 21. Stir the dish occasionally.
  22. 22. Serve the finished dish with white rice.
