🍽️ Herb-Roasted Lamb Loin with Herb Oil

Ingredients
- 1 tbsp dried herbs of Provence
- 1 tsp dried lavender flowers
- 0.5 tsp black pepper (coarsely ground)
- 3 tbsp olive oil
- 450 g lamb loin fillet (4 lamb loin fillets)
Instructions
- 1. Whisk the Provençal herbs, lavender buds, and pepper with the olive oil in a small bowl.
- 2. Rinse the lamb loin fillets and pat them completely dry with a kitchen towel.
- 3. Place the fillets in a shallow dish.
- 4. Brush the fillets evenly all over with the herb oil.
- 5. Let the marinated fillets rest in the refrigerator for at least 1 hour.
- 6. Place the fillets in an aluminum foil tray.
- 7. Grill the fillets for about 2 to 3 minutes on each side.
- 8. Wrap the grilled fillets in aluminum foil.
- 9. Let the wrapped fillets rest for 5 minutes.
- 10. Slice the fillets diagonally.
- 11. Serve the lamb fillets.
