  1. 1. Peel the asparagus spears and trim off the woody ends. Cook the asparagus in plenty of salted water for 12 minutes until tender-crisp.
  2. 2. Mix vinegar, 4 tablespoons of asparagus cooking water, sugar, salt, and pepper to make a marinade. Place the warm asparagus in the marinade and let it cool and marinate for 1 hour, turning it occasionally.
  3. 3. Blanch the tomatoes (pour boiling water over them), peel them, quarter them, remove the core, and dice them finely.
  4. 4. Peel the shallots and drain the gherkins. Dice the shallots and gherkins very finely. Place the vegetable cubes in a bowl and season generously with pickle brine, salt, and pepper.
  5. 5. Arrange the marinated asparagus and decoratively top it with the tomato-gherkin relish.
