🍽️ Sweet and Sour Pumpkin in Jars

Ingredients
- 0.5 untreated lemon
- 500 g pumpkin flesh (e.g. butternut squash) peeled and seeded
- 200 ml apple cider vinegar
- 200 ml apple juice (clear)
- 6 clove buds
- 2 star anise
- 2 tbsp sugar
- 1 tsp salt
Instructions
- 1. Squeeze the lemon to extract the juice.
- 2. Cut the pumpkin into coarse cubes.
- 3. Add the pumpkin cubes, vinegar, apple juice, lemon juice, cloves, anise, sugar, and salt to a pot.
- 4. Bring the mixture to a boil.
- 5. Reduce the heat to a low flame.
- 6. Cook the pumpkin for about 10 minutes until it is tender but still firm to the bite.
- 7. Fill the hot mixture immediately into prepared jars.
- 8. Seal the jars tightly immediately.
- 9. Allow the jars to cool down.
- 10. Let the pumpkin marinate for at least two days before eating.
