  1. 1. Whisk miso paste, mirin, sugar, and sake together in a pot.
  2. 2. Bring the mixture to a boil while stirring.
  3. 3. Simmer the marinade over medium heat for 7 minutes.
  4. 4. Remove 5 tablespoons of the warm marinade.
  5. 5. Let these 5 tablespoons cool down.
  6. 6. Store the cooled marinade in a closed container in the refrigerator.
  7. 7. Pour the remaining hot miso mixture from the pot into a shallow baking dish.
  8. 8. Allow the remaining marinade in the dish to cool completely.
  9. 9. Rinse the cod under running water.
  10. 10. Pat the fish dry with kitchen paper.
  11. 11. Turn the fish in the cooled miso marinade so it is completely covered.
  12. 12. Cover the dish with cling film.
  13. 13. Let the fish marinate in the refrigerator for 2 days.
  14. 14. Roast sesame seeds in a pan without oil until fragrant.
  15. 15. Grind the roasted sesame seeds in a mortar until the oil comes out.
  16. 16. Peel a clove of garlic.
  17. 17. Add the garlic to the sesame in the mortar.
  18. 18. Grind the mixture into a smooth paste.
  19. 19. Stir the paste together with soy sauce, rice vinegar, and a pinch of sugar.
  20. 20. Wash the snow peas.
  21. 21. Remove the strings and ends of the snow peas.
  22. 22. Cut the snow peas lengthwise into very fine strips.
  23. 23. Lift the marinated fish out of the marinade.
  24. 24. Pat the fish dry again.
  25. 25. Season the fish with black pepper.
  26. 26. Heat oil in a non-stick pan.
  27. 27. Sear the fish in the pan on each side.
  28. 28. Salt the fish to taste.
  29. 29. Place the fish in a baking dish.
  30. 30. Preheat the oven to 200 degrees (convection: 180 degrees, gas: level 3).
  31. 31. Bake the fish in the preheated oven on the rack for 10 to 13 minutes.
  32. 32. Cook the noodles according to the package instructions.
  33. 33. Add the snow peas to the noodles 1 minute before the end of the cooking time.
  34. 34. Drain the noodles and snow peas in a colander.
  35. 35. Let the water drain off.
  36. 36. Mix the drained noodles with the sesame oil.
  37. 37. Place the noodles on a plate.
  38. 38. Place the cooked fish on top of the noodles.
  39. 39. Decoratively drizzle the sesame sauce over the dish.
  40. 40. Decoratively add the reserved marinade from the beginning as well.
