🍽️ Japanese Marinated Cod with Sesame Noodles

Ingredients
- 325 g white miso paste
- 75 ml mirin (or grapefruit juice)
- 175 g cane sugar
- 150 ml sake (or fish stock)
- 4 cod fillets (with skin, 180 g each)
- 4 tbsp sesame seeds
- 1 small garlic clove
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 150 g snow peas
- pepper
- 1 tbsp oil
- salt
- 200 g soba noodles
- 2 tsp sesame oil
Instructions
- 1. Whisk miso paste, mirin, sugar, and sake together in a pot.
- 2. Bring the mixture to a boil while stirring.
- 3. Simmer the marinade over medium heat for 7 minutes.
- 4. Remove 5 tablespoons of the warm marinade.
- 5. Let these 5 tablespoons cool down.
- 6. Store the cooled marinade in a closed container in the refrigerator.
- 7. Pour the remaining hot miso mixture from the pot into a shallow baking dish.
- 8. Allow the remaining marinade in the dish to cool completely.
- 9. Rinse the cod under running water.
- 10. Pat the fish dry with kitchen paper.
- 11. Turn the fish in the cooled miso marinade so it is completely covered.
- 12. Cover the dish with cling film.
- 13. Let the fish marinate in the refrigerator for 2 days.
- 14. Roast sesame seeds in a pan without oil until fragrant.
- 15. Grind the roasted sesame seeds in a mortar until the oil comes out.
- 16. Peel a clove of garlic.
- 17. Add the garlic to the sesame in the mortar.
- 18. Grind the mixture into a smooth paste.
- 19. Stir the paste together with soy sauce, rice vinegar, and a pinch of sugar.
- 20. Wash the snow peas.
- 21. Remove the strings and ends of the snow peas.
- 22. Cut the snow peas lengthwise into very fine strips.
- 23. Lift the marinated fish out of the marinade.
- 24. Pat the fish dry again.
- 25. Season the fish with black pepper.
- 26. Heat oil in a non-stick pan.
- 27. Sear the fish in the pan on each side.
- 28. Salt the fish to taste.
- 29. Place the fish in a baking dish.
- 30. Preheat the oven to 200 degrees (convection: 180 degrees, gas: level 3).
- 31. Bake the fish in the preheated oven on the rack for 10 to 13 minutes.
- 32. Cook the noodles according to the package instructions.
- 33. Add the snow peas to the noodles 1 minute before the end of the cooking time.
- 34. Drain the noodles and snow peas in a colander.
- 35. Let the water drain off.
- 36. Mix the drained noodles with the sesame oil.
- 37. Place the noodles on a plate.
- 38. Place the cooked fish on top of the noodles.
- 39. Decoratively drizzle the sesame sauce over the dish.
- 40. Decoratively add the reserved marinade from the beginning as well.
