🍽️ Harzer Cheese with Marinated Onions and Carrots

Ingredients
- 7 tbsp dry white wine
- 100 ml apple cider vinegar
- salt
- pepper (from the mill)
- 2 tsp sugar
- 6 tbsp sunflower oil
- 100 g pearl onions (from the jar)
- 1 large carrot
- 400 g small, round Harzer cheese (or other sour milk cheese)
- flat-leaf parsley
- 1 tbsp pumpkin seeds
Instructions
- 1. Empty the can of pearl onions into a colander and let the water drain off.
- 2. Peel the carrot and grate it finely.
- 3. Put the wine, vinegar, salt, pepper, sugar, and oil into a pot.
- 4. Bring the liquid in the pot to a boil.
- 5. Add the drained pearl onions and the grated carrots to the pot.
- 6. Let the mixture come to a boil once more.
- 7. Remove the pot from the heat and let the ingredients steep in the warm liquid for about 5 minutes.
- 8. Break the Harzer cheese into bite-sized pieces according to your taste.
- 9. Place the cheese pieces into a bowl.
- 10. Pour the warm onion-carrot mixture over the cheese.
- 11. Cover the bowl and let the cheese marinate for several hours, preferably overnight.
- 12. Wash the parsley and shake it dry.
- 13. Pluck the leaves from the stems.
- 14. Gently fold the parsley leaves and pumpkin seeds into the marinated mixture.
