  1. 1. Empty the can of pearl onions into a colander and let the water drain off.
  2. 2. Peel the carrot and grate it finely.
  3. 3. Put the wine, vinegar, salt, pepper, sugar, and oil into a pot.
  4. 4. Bring the liquid in the pot to a boil.
  5. 5. Add the drained pearl onions and the grated carrots to the pot.
  6. 6. Let the mixture come to a boil once more.
  7. 7. Remove the pot from the heat and let the ingredients steep in the warm liquid for about 5 minutes.
  8. 8. Break the Harzer cheese into bite-sized pieces according to your taste.
  9. 9. Place the cheese pieces into a bowl.
  10. 10. Pour the warm onion-carrot mixture over the cheese.
  11. 11. Cover the bowl and let the cheese marinate for several hours, preferably overnight.
  12. 12. Wash the parsley and shake it dry.
  13. 13. Pluck the leaves from the stems.
  14. 14. Gently fold the parsley leaves and pumpkin seeds into the marinated mixture.
