🍽️ Fresh Zucchini with Mint-Lemon Dressing

Ingredients
- 3 sprigs mint
- 0.5 lemon
- 2 tbsp honey
- 2 tbsp olive oil
- 750 g zucchini (3 zucchini)
- salt
- pepper
Instructions
- 1. Wash the mint thoroughly.
- 2. Shake the mint dry so that no water remains on it.
- 3. Carefully pluck the mint leaves from the stems.
- 4. Chop the mint leaves coarsely.
- 5. Squeeze the lemon to extract the juice.
- 6. Put two tablespoons of lemon juice into a small bowl.
- 7. Add the honey to the bowl.
- 8. Add one tablespoon of oil to the bowl.
- 9. Add the chopped mint to the bowl.
- 10. Mix the ingredients for the marinade well together.
- 11. Remove the hard ends of the zucchini.
- 12. Rinse the zucchini under running water.
- 13. Dry the zucchini with a kitchen towel.
- 14. Slice the zucchini diagonally.
- 15. Make sure the slices are about one centimeter thick.
- 16. Preheat a grill pan on the stove.
- 17. Brush the hot grill pan with the remaining oil.
- 18. Place the zucchini slices in the grill pan.
- 19. Grill the zucchini on the first side for two to three minutes.
- 20. Turn the zucchini slices.
- 21. Grill the zucchini on the second side for two to three minutes.
- 22. Take the grilled zucchini out of the pan.
- 23. Place the zucchini slices in a large bowl.
- 24. Season the zucchini with salt.
- 25. Season the zucchini with pepper.
- 26. Pour the prepared marinade over the hot zucchini slices.
- 27. Mix the zucchini well so that everything is evenly coated.
- 28. Let the zucchini marinate for at least one hour so that it absorbs the marinade.
- 29. Taste the zucchini again before serving.
