  2. 2. Shake the mint dry so that no water remains on it.
  3. 3. Carefully pluck the mint leaves from the stems.
  4. 4. Chop the mint leaves coarsely.
  5. 5. Squeeze the lemon to extract the juice.
  6. 6. Put two tablespoons of lemon juice into a small bowl.
  7. 7. Add the honey to the bowl.
  8. 8. Add one tablespoon of oil to the bowl.
  9. 9. Add the chopped mint to the bowl.
  10. 10. Mix the ingredients for the marinade well together.
  11. 11. Remove the hard ends of the zucchini.
  12. 12. Rinse the zucchini under running water.
  13. 13. Dry the zucchini with a kitchen towel.
  14. 14. Slice the zucchini diagonally.
  15. 15. Make sure the slices are about one centimeter thick.
