  3. 3. Slice the zucchini diagonally into rounds about 1 cm thick.
  4. 4. Press the garlic or use pre-pressed garlic.
  5. 5. Whisk the lemon juice, garlic, chopped parsley, and chopped mint together in a bowl.
  6. 6. Stir the olive oil into the herb-lemon mixture.
  7. 7. Pour the marinade over the zucchini slices.
  8. 8. Toss everything well so the zucchini is evenly coated.
  9. 9. Let the salad marinate for about 1 hour.
  10. 10. Toast the bread slices until crisp.
  11. 11. Remove the zucchini from the marinade and arrange it on deep plates.
  12. 12. Garnish the salad with fresh mint leaves.
