  1. 1. Rinse the lemons under cold running water and pat them dry with a kitchen towel. Slice the lemons into very thin rounds. A slicer works best for this.
  2. 2. Finely chop the rosemary needles. Whisk the olive oil with the chopped rosemary, pepper, and about half a teaspoon of salt. Pour the marinade over the lemon slices and let them sit covered in the refrigerator for one hour.
  3. 3. Arrange the marinated lemon slices on a plate and garnish with fresh cilantro.
