🍽️ Tender Spareribs with Sweet and Sour Grill Sauce

Ingredients
- 2 kg Pork ribs (kitchen-ready)
- 2 Onions
- 2 Garlic cloves
- 2 tbsp Oil (2 g each)
- 100 ml Meat broth
- 0.5 Unpeeled orange (juice)
- 2 tbsp Ketchup (30 g each)
- 2 tbsp Tomato paste (30 g each)
- 1 tsp Liquid honey
- 1 tbsp Hot mustard
- 2 tbsp Soy sauce (30 ml each)
- 1 tbsp Worcestershire sauce
- 1 tbsp Paprika powder
- 0.5 Unpeeled Lemon (juice)
- 1 tsp Freshly grated Ginger
- Salt
- Tabasco
- Pepper (from the mill)
Instructions
- 1. Rinse the spare ribs thoroughly under running water.
- 2. Pat the meat pieces dry with a kitchen towel.
- 3. Place the spare ribs in a large pot.
- 4. Pour in enough water to completely cover the meat.
- 5. Heat the water over medium heat until it boils.
- 6. Peel one onion and one clove of garlic.
- 7. Halve the onion and the garlic clove.
- 8. Add the onion and garlic to the boiling water.
- 9. Let the spare ribs simmer for about 30 minutes over medium heat.
- 10. Peel the second onion.
- 11. Dice the onion into small cubes.
- 12. Heat some oil in a frying pan over medium heat.
- 13. Sauté the onion cubes until translucent and soft.
- 14. Peel the remaining garlic clove.
- 15. Press the garlic directly into the pan with the onion.
- 16. Deglaze the pan with broth.
- 17. Pour in the orange juice.
- 18. Let the liquid reduce slightly until it thickens.
- 19. Remove the pan from the heat.
- 20. Pour the mixture into a separate bowl.
- 21. Stir ketchup into the sauce.
- 22. Add tomato paste and mix it well.
- 23. Add honey to the sauce.
- 24. Stir mustard into the mixture.
- 25. Pour in soy sauce.
- 26. Add Worcestershire sauce to the sauce.
- 27. Sprinkle paprika powder over the mixture.
- 28. Squeeze lemon juice into the sauce.
- 29. Add grated ginger.
- 30. Season the sauce with salt to taste.
- 31. Add a few drops of Tabasco sauce.
- 32. Season the sauce with black pepper.
- 33. Remove the spare ribs from the cooking broth.
- 34. Place the meat pieces on a hot grill.
- 35. Brush the spare ribs generously with the barbecue sauce.
- 36. Grill the ribs for 15 to 20 minutes.
- 37. Turn the meat pieces occasionally to ensure even cooking.
- 38. Brush the spare ribs with the marinade repeatedly while grilling.
- 39. Separate the grilled spare ribs into individual ribs.
- 40. Arrange the ribs on plates.
- 41. Serve the spare ribs hot.
- 42. Optionally serve with coleslaw.
