🍽️ Citrus-Marinated Ribs

Ingredients
- 2 spring onions
- 1 red chili pepper
- 2 garlic cloves
- 2 unwaxed lemons
- 1.5 kg pork ribs
- 5 tbsp soy sauce
- 2 tbsp olive oil
- 3 tbsp honey
- 2 tbsp freshly chopped coriander
- 0.5 tsp freshly grated ginger
Instructions
- 1. Wash the spring onions thoroughly.
- 2. Chop the spring onions into small pieces.
- 3. Wash the chili pepper.
- 4. Slice the chili into thin rings.
- 5. Peel the garlic cloves.
- 6. Press the garlic through a garlic press.
- 7. Wash the lemons under hot water.
- 8. Dry the lemons with a cloth.
- 9. Slice one of the lemons into thin rounds.
- 10. Grate about one teaspoon of zest from the second lemon.
- 11. Squeeze the juice from the second lemon.
- 12. Wash the piece of meat.
- 13. Pat the meat dry with kitchen paper.
- 14. Place the meat in a shallow baking dish.
- 15. Whisk all marinade ingredients together in a bowl.
- 16. Pour the marinade evenly over the meat.
- 17. Arrange the lemon slices on top of the meat.
- 18. Cover the dish tightly with plastic wrap.
- 19. Place the dish in the refrigerator for at least six hours.
