🍽️ Citrus Marinated Flounder Rolls

Ingredients
- 1 tbsp olive oil
- 640 g flounder fillet (double fillets, 4 flounder fillets)
- 1 orange
- 1 organic lemon
- 3 tbsp raisins
- salt
- pepper
- 2 spring onions
Instructions
- 1. Grease a baking dish lightly with one teaspoon of olive oil.
- 2. Rinse the flounder fillets under cold water and pat them dry with a kitchen towel.
- 3. Make several cuts into the skin side of the fillets with a knife.
- 4. Roll up the fillets with the skin side facing inward.
- 5. Place the fish rolls into the prepared baking dish.
- 6. Wash the orange and lemon thoroughly with hot water and pat them dry.
- 7. Finely grate the zest of the orange and the lemon.
- 8. Squeeze the juice from both fruits.
- 9. Mix the fruit juice and zest with the raisins.
- 10. Season the mixture with salt and pepper to taste.
- 11. Wash the spring onions and shake off excess water.
- 12. Remove the tough ends of the spring onions.
- 13. Slice the spring onions into thin, diagonal rings.
- 14. Add the sliced spring onions to the fruit mixture.
- 15. Distribute the entire marinade evenly over the fish rolls.
- 16. Drizzle the rolls with the remaining olive oil.
- 17. Cover the dish and place it in the refrigerator for about 12 hours.
- 18. Preheat the oven to 220 degrees Celsius conventional heat (fan 200 degrees or gas level 3 to 4).
- 19. Cook the fish rolls in the hot oven for 25 to 30 minutes.
