🍽️ Marinated Schnitzel with Sweet Potato Mash

Ingredients
- 1 bunch parsley
- 2 garlic cloves
- 1 red onion
- 0.5 red chili pepper
- 0.5 tsp dried oregano
- 0.5 tsp dried thyme
- 1 tbsp apple cider vinegar
- 0.5 organic lemon (zest and juice)
- 14 tbsp olive oil
- salt
- pepper
- 600 g pork schnitzel from the top round (4 slices)
- 800 g sweet potatoes (2–3 pieces)
- 200 g whipping cream
- 300 g broccolini
- 300 g pak choi
Instructions
- 1. Wash the parsley and shake it dry.
- 2. Chop the parsley into fine pieces.
- 3. Peel the garlic and the onion.
- 4. Chop half of the onion finely.
- 5. Set the other half of the onion aside.
- 6. Wash the chili pepper.
- 7. Slice the chili pepper.
- 8. Put the parsley, garlic, half the onion, and chili slices into a blender.
- 9. Add half a teaspoon of dried herbs to the blender.
- 10. Add vinegar to the blender.
- 11. Add the lemon zest to the blender.
- 12. Add the lemon juice to the blender.
- 13. Add 12 tablespoons of olive oil to the blender.
- 14. Blend the ingredients into a smooth sauce.
- 15. Season the sauce with salt and pepper.
- 16. Pat the meat dry with a kitchen towel.
- 17. Pound the meat slightly to soften it.
- 18. Marinate the schnitzel with half of the herb sauce.
- 19. Place the schnitzel in the refrigerator for at least 30 minutes.
- 20. Peel the sweet potatoes.
- 21. Cut the sweet potatoes into small pieces.
- 22. Cook the sweet potatoes for 15 minutes in boiling salted water until soft.
- 23. Drain the sweet potatoes.
- 24. Let the sweet potatoes drain.
- 25. Add cream to the sweet potatoes.
- 26. Puree the sweet potatoes finely with a hand blender.
- 27. Season the puree with salt and pepper.
- 28. Add some thyme to the puree.
- 29. Clean the wild broccoli and the pak choi.
- 30. Wash the vegetables.
- 31. Halve the wild broccoli lengthwise if necessary.
- 32. Cut the pak choi into strips.
- 33. Cut the reserved onion into strips.
- 34. Heat 1 tablespoon of oil in a pan.
- 35. Sauté the onion strips, broccoli, and pak choi over medium heat for 5 to 7 minutes.
- 36. Heat the remaining oil in another pan.
- 37. Fry the marinated schnitzels for 7 to 10 minutes on both sides over low to medium heat.
- 38. Make sure the herbs do not burn.
- 39. Plate the sweet potato mash with the wild broccoli, pak choi, and onions.
- 40. Place the marinated schnitzels on top.
- 41. Drizzle the schnitzels with the remaining sauce.
- 42. Serve the dish.
