🍽️ Fresh Sardines in Spicy Marinade

Ingredients
- 500 g fresh sardines (ready for the kitchen)
- 1 carrot (coarsely chopped)
- 1 onion (coarsely chopped)
- sage leaf
- 1 tsp peppercorns
- 250 ml dry white wine
- 1 lemon (sliced)
- salt
- 1 fresh red chili pepper (halved, deseeded and finely diced)
- 1 bunch parsley (finely chopped)
- 1 garlic clove
- 125 ml olive oil
Instructions
- 1. Rinse the sardines under running water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Cut open the bellies of the fish.
- 4. Flatten the fish open.
- 5. Carefully remove the bones using your thumbs.
- 6. Cut the carrot into pieces.
- 7. Cut the onion into pieces.
- 8. Place the carrot, onion, sage leaves, and peppercorns into a pot.
- 9. Pour in a quarter liter of water.
- 10. Add the lemon slices to the pot.
- 11. Pour the wine into the pot.
- 12. Let the mixture simmer gently for about ten minutes.
- 13. Season the liquid with salt.
- 14. Remove the pot from the heat.
- 15. Place the sardines into the hot spiced broth.
- 16. Let the fish steep in the liquid for about one to two minutes.
- 17. Remove the sardines from the broth.
- 18. Allow the fish to cool down.
- 19. Place the sardines into a shallow dish.
- 20. Mix the oil with the parsley.
- 21. Add the diced chili peppers to the oil mixture.
- 22. Press the garlic through and add it to the mixture.
- 23. Pour the oil mixture over the sardines.
- 24. Let the marinade infuse for about four hours.
- 25. Turn the fish several times during this period.
