🍽️ Fresh Sardines in Zesty Spiced Broth

Ingredients
- 500 g fresh sardine fillets (kitchen-ready)
- 1 onion (coarsely chopped)
- 1 carrot (peeled and finely diced)
- sage leaf
- 1 tsp peppercorns
- 250 ml dry white wine
- 1 lemon (sliced)
- salt
- 100 g red pepper strips (pickled, e.g. from a jar)
- 1 bunch parsley (finely chopped)
- 1 garlic clove
- 125 ml olive oil
- 100 g black olives
Instructions
- 1. Cut the carrot and onion into small pieces.
- 2. Place the carrot and onion pieces along with the sage leaves and peppercorns into a pot.
- 3. Pour 250 milliliters of water and the wine over the ingredients.
- 4. Add the lemon slices to the pot as well.
- 5. Bring the mixture to a boil and then let it simmer gently for about 10 minutes.
- 6. Season the broth with a pinch of salt.
- 7. Remove the pot from the heat.
- 8. Place the sardines in the warm spiced broth and let them steep for about 2 minutes.
- 9. Carefully remove the fish from the broth.
- 10. Let the sardines cool down on a plate.
- 11. Place the cooled fish into a shallow dish.
- 12. Mix the oil with the chopped parsley and the pressed garlic.
- 13. Pour the oil-parsley mixture evenly over the sardines.
- 14. Let the fish marinate in the refrigerator for about 4 hours.
- 15. Turn the sardines a few times during the marinating process to ensure they are well-flavored.
- 16. Arrange the finished sardines decoratively in a shallow dish.
- 17. Place the pepper strips on top of the fish as decoration.
- 18. Distribute the olives over the sardines.
