🍽️ Overnight marinated chicken drumsticks braised in red wine with root vegetables

Ingredients
- 8 small chicken drumsticks (approx. 80 g each)
- 400 ml robust red wine
- 1 clove
- 1 bay leaf
- 1 tbsp dark balsamic vinegar
- 2 tbsp honey
- 4 tbsp olive oil
- 1 tbsp thyme
- 1 tbsp rosemary
- 4 carrots
- 5 stalks celery
- 1 tbsp vegetable oil
Instructions
- 1. Rinse the chicken drumsticks under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Place the red wine, cloves, bay leaves, balsamic vinegar, honey, olive oil, thyme leaves, and rosemary needles in a bowl.
- 4. Mix the marinade ingredients well together.
- 5. Place the chicken drumsticks into the marinade.
- 6. Let the drumsticks marinate overnight in the refrigerator.
- 7. Peel the carrots.
- 8. Slice the carrots diagonally.
- 9. Wash the celery.
- 10. Slice the celery diagonally as well.
- 11. Remove the chicken drumsticks from the marinade.
- 12. Let the meat drain briefly.
- 13. Heat some oil in a large pan.
- 14. Sear the chicken drumsticks on all sides.
- 15. This should take about 8 to 10 minutes.
- 16. Season the meat with salt and pepper to taste.
- 17. Add the prepared vegetables to the pan.
- 18. Pour the remaining marinade over the meat and vegetables.
- 19. Let everything braise over medium heat.
- 20. This should take about 20 to 25 minutes.
- 21. Portion the chicken drumsticks and vegetables into small bowls.
