🍽️ Grilled Turkey Steaks in Spice Marinade with Fruity Dip

Ingredients
- 8 turkey thigh steaks (approx. 120 g each)
- 5 tbsp peanut oil
- 3 tbsp soy sauce
- 1 red chili pepper
- 1 garlic clove
- 1 lime leaf
- 10 g fresh ginger
- 40 g spring onions
- 2 stalks lemongrass (approx. 15 cm length)
- 1 tbsp finely chopped coriander leaves
- salt
- pepper
- 1 tbsp peanut oil
- 2 garlic cloves (finely chopped)
- 100 g spring onions (finely chopped)
- 500 g pineapple flesh (finely diced)
- 70 g ketchup
- 100 ml pineapple juice
- salt
- pepper
- 0.25 tsp brown sugar
- 1 tbsp rice vinegar
Instructions
- 1. Whisk the oil and soy sauce together in a wide bowl.
- 2. Remove the stem from the chili and slice it into thin rings.
- 3. Discard the seeds from the chili rings.
- 4. Peel the garlic and mince it finely.
- 5. Peel the ginger and cut it into thin strips.
- 6. Trim the spring onions and slice them into thin rings.
- 7. Cut the lemongrass stalks in half lengthwise.
- 8. Add all prepared ingredients, the lime leaf, and the coriander to the bowl.
- 9. Mix everything well with the oil.
- 10. Season the meat steaks with salt and pepper.
- 11. Place the meat steaks in the marinade.
- 12. Pour the remaining mixture over the meat.
- 13. Let the meat marinate covered in the refrigerator for about 4 to 5 hours.
- 14. Heat the oil in a frying pan or wok.
- 15. Briefly fry the garlic and spring onion cubes in it.
- 16. Add the pineapple chunks.
- 17. Stir in ketchup, pineapple juice, salt, pepper, sugar, and rice vinegar.
- 18. Let the sauce simmer gently for 5 to 10 minutes.
- 19. Remove the sauce from the heat.
- 20. Allow the sauce to cool.
- 21. Remove the steaks from the marinade.
- 22. Let the meat drain briefly.
- 23. Place the steaks on the preheated grill.
- 24. Grill the steaks for 4 to 5 minutes on each side.
- 25. Plate the grilled turkey.
- 26. Serve the turkey with the fruity sauce and cooked rice.
