  1. 1. Whisk the oil and soy sauce together in a wide bowl.
  2. 2. Remove the stem from the chili and slice it into thin rings.
  3. 3. Discard the seeds from the chili rings.
  4. 4. Peel the garlic and mince it finely.
  5. 5. Peel the ginger and cut it into thin strips.
  6. 6. Trim the spring onions and slice them into thin rings.
  7. 7. Cut the lemongrass stalks in half lengthwise.
  8. 8. Add all prepared ingredients, the lime leaf, and the coriander to the bowl.
  9. 9. Mix everything well with the oil.
  10. 10. Season the meat steaks with salt and pepper.
  11. 11. Place the meat steaks in the marinade.
  12. 12. Pour the remaining mixture over the meat.
  13. 13. Let the meat marinate covered in the refrigerator for about 4 to 5 hours.
  14. 14. Heat the oil in a frying pan or wok.
  15. 15. Briefly fry the garlic and spring onion cubes in it.
  16. 16. Add the pineapple chunks.
  17. 17. Stir in ketchup, pineapple juice, salt, pepper, sugar, and rice vinegar.
