🍽️ Simple marinated mushrooms

Ingredients
- 450 g mixed forest mushrooms (e.g. chanterelles, porcini)
- 100 ml white wine vinegar
- 200 ml dry white wine
- 1 tsp juniper berries
- 5 peppercorns
- 2 garlic cloves
- 5 fresh thyme sprigs
- 350 ml olive oil
Instructions
- 1. Clean the mushrooms thoroughly.
- 2. Wipe them with a damp kitchen cloth.
- 3. Cut large mushrooms into halves or quarters.
- 4. Put vinegar, wine, juniper berries, peppercorns, and 100 milliliters of water into a pot.
- 5. Bring the liquid to a boil.
- 6. Add the mushrooms to the boiling water.
- 7. Let the mushrooms steep for about five minutes.
- 8. Adjust the time depending on the size of the mushrooms.
- 9. Peel the garlic clove.
- 10. Cut the garlic clove into quarters.
- 11. Wash the thyme sprigs.
- 12. Dry the thyme sprigs.
- 13. Drain the mushrooms in a colander.
- 14. Fill the mushrooms into rinsed Twist-Off jars.
- 15. Add the garlic quarters to the jars.
- 16. Place the thyme sprigs on top of the mushrooms.
- 17. Pour olive oil over everything.
- 18. Make sure the mushrooms are completely covered with oil.
- 19. Seal the jars tightly.
- 20. Store the jars preferably in the refrigerator.
