  1. 1. Clean the mushrooms thoroughly.
  2. 2. Wipe them with a damp kitchen cloth.
  3. 3. Cut large mushrooms into halves or quarters.
  4. 4. Put vinegar, wine, juniper berries, peppercorns, and 100 milliliters of water into a pot.
  5. 5. Bring the liquid to a boil.
  6. 6. Add the mushrooms to the boiling water.
  7. 7. Let the mushrooms steep for about five minutes.
  8. 8. Adjust the time depending on the size of the mushrooms.
  9. 9. Peel the garlic clove.
  10. 10. Cut the garlic clove into quarters.
  11. 11. Wash the thyme sprigs.
  12. 12. Dry the thyme sprigs.
  13. 13. Drain the mushrooms in a colander.
  14. 14. Fill the mushrooms into rinsed Twist-Off jars.
  15. 15. Add the garlic quarters to the jars.
  16. 16. Place the thyme sprigs on top of the mushrooms.
  17. 17. Pour olive oil over everything.
  18. 18. Make sure the mushrooms are completely covered with oil.
  19. 19. Seal the jars tightly.
  20. 20. Store the jars preferably in the refrigerator.
