🍽️ Pickled Mackerel

Ingredients
- 4 kitchen-ready mackerel (gutted, scaled, headless)
- 5 onions
- 10 bay leaves
- 1 untreated lemon (sliced)
- 2 tbsp juniper berries
- 3 lemons (use the juice)
- pepper (coarsely ground from a mill)
- salt
- 1 tbsp sugar
- 1 l water
Instructions
- 1. Peel the onion and slice it into rings. Cut each mackerel into four pieces. Bring water to a boil in a pot along with bay leaves, juniper berries, sugar, salt, and plenty of pepper.
- 2. Add the lemon juice, lemon slices, and onion rings. Set the mixture aside. Place the mackerel pieces into the boiling hot liquid and let them marinate for four to five hours. Serve the dish cold.
