  1. 1. Thoroughly wash the zucchini under running water.
  2. 2. Remove the tough ends of the zucchini.
  3. 3. Slice the zucchini into even rounds.
  4. 4. Bring a pot of water with some salt to a boil.
  5. 5. Cook the zucchini slices briefly in the boiling salted water (this is called blanching).
  6. 6. Remove the zucchini immediately from the water and place it in cold water to stop the cooking process (shocking).
  7. 7. Let the zucchini drain well.
  8. 8. Fill the drained zucchini slices into prepared, clean jars.
  9. 9. Strip the needles from the rosemary stems.
  10. 10. Gently warm half of the required oil amount together with the rosemary needles.
  11. 11. Pour the warm rosemary oil over the zucchini in the jars.
  12. 12. Fill the jars with the remaining oil until the zucchini is completely covered.
  13. 13. Seal the jars tightly.
  14. 14. Store the jars in a cool and dark place.
