🍽️ Fresh Herb Zucchini in a Jar

Ingredients
- 1 kg Zucchini
- Salt
- 3 sprigs Rosemary
- 400 ml Olive oil
Instructions
- 1. Thoroughly wash the zucchini under running water.
- 2. Remove the tough ends of the zucchini.
- 3. Slice the zucchini into even rounds.
- 4. Bring a pot of water with some salt to a boil.
- 5. Cook the zucchini slices briefly in the boiling salted water (this is called blanching).
- 6. Remove the zucchini immediately from the water and place it in cold water to stop the cooking process (shocking).
- 7. Let the zucchini drain well.
- 8. Fill the drained zucchini slices into prepared, clean jars.
- 9. Strip the needles from the rosemary stems.
- 10. Gently warm half of the required oil amount together with the rosemary needles.
- 11. Pour the warm rosemary oil over the zucchini in the jars.
- 12. Fill the jars with the remaining oil until the zucchini is completely covered.
- 13. Seal the jars tightly.
- 14. Store the jars in a cool and dark place.
