🍽️ Marinated young artichokes

Ingredients
- 12 artichokes (small and fresh)
- juice of one lemon
- salt
- pepper (freshly ground)
- 5 tbsp lemon juice (freshly squeezed)
- 10 tbsp olive oil (extra virgin)
- 3 tbsp parsley (coarsely chopped)
- 1 carrot
- 1 white onion
- 1 garlic clove
Instructions
- 1. Generously remove the outer, hard leaves of the artichokes.
- 2. Cut off the tips of the artichokes.
- 3. Cut the stems off the artichokes.
- 4. Halve or quarter the artichokes lengthwise.
- 5. Place the artichokes in a large pot with plenty of salted water.
- 6. Bring the water to a boil.
- 7. Cook the artichokes in it for 15 to 20 minutes.
- 8. Lift out the artichokes and let them drain well.
- 9. Peel the onion and cut it into thin wedges.
- 10. Peel the carrot and slice it into thin rounds.
- 11. Peel the garlic and chop it finely.
- 12. Stir together oil, lemon juice, onion, garlic, carrot, parsley, salt, and pepper to make a marinade.
- 13. Toss the hot artichokes with the marinade.
- 14. Let the artichokes marinate for 15 minutes.
- 15. Stir the artichokes once more.
- 16. Serve the artichokes with fresh white bread.
