  1. 1. Generously remove the outer, hard leaves of the artichokes.
  2. 2. Cut off the tips of the artichokes.
  3. 3. Cut the stems off the artichokes.
  4. 4. Halve or quarter the artichokes lengthwise.
  5. 5. Place the artichokes in a large pot with plenty of salted water.
  6. 6. Bring the water to a boil.
  7. 7. Cook the artichokes in it for 15 to 20 minutes.
  8. 8. Lift out the artichokes and let them drain well.
  9. 9. Peel the onion and cut it into thin wedges.
  10. 10. Peel the carrot and slice it into thin rounds.
  11. 11. Peel the garlic and chop it finely.
  12. 12. Stir together oil, lemon juice, onion, garlic, carrot, parsley, salt, and pepper to make a marinade.
  13. 13. Toss the hot artichokes with the marinade.
  14. 14. Let the artichokes marinate for 15 minutes.
  15. 15. Stir the artichokes once more.
  16. 16. Serve the artichokes with fresh white bread.
