🍽️ Sweet and Sour Marinated Honey Cucumbers

Ingredients
- 2 kg cooking cucumber
- 4 spring onions
- 400 ml apple cider vinegar
- 150 g honey
- 3 tbsp salt
- 8 star anise
- 1 tbsp juniper berries
- 2 tbsp mustard seeds
Instructions
- 1. Peel the cucumbers completely.
- 2. Remove the hard ends and halve the cucumbers lengthwise.
- 3. Cut the cucumber halves into thick slices.
- 4. Wash the spring onions thoroughly.
- 5. Remove the dry ends of the spring onions.
- 6. Slice the spring onions into thin rings.
- 7. Add the vinegar, about 300 milliliters of water, the honey, the salt, and the spices to a pot.
- 8. Bring the liquid to a boil.
- 9. Add the cucumber slices to the boiling liquid.
- 10. Let the cucumbers cook briefly.
- 11. Lift the cucumbers out of the liquid using a slotted spoon.
- 12. Distribute the cucumbers onto prepared jars.
- 13. Pour the hot liquid over the cucumbers in the jars.
- 14. Seal the jars tightly.
- 15. Let the jars cool down at room temperature.
- 16. Let the cucumbers marinate for about 4 weeks before consuming.
