🍽️ Chicken Skewers with Peanut Curry Dip

Ingredients
- 600 g chicken breast fillet (kitchen-ready, skinless)
- 2 garlic cloves
- 0.5 chopped onion
- 0.5 tsp chopped lemongrass
- 1 pinch ground anise
- 1 pinch ground coriander
- 1 pinch ground cumin
- 2 tbsp light soy sauce
- 4 tbsp coconut milk
- 2 tbsp oil
- salt
- pepper (from the mill)
- 150 g unsalted, peeled peanuts
- 200 ml coconut milk
- 2 tbsp peanut butter
- 1 tsp curry
- 1 drop lemon juice
- 1 pinch sugar
Instructions
- 1. Rinse the chicken meat under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the meat into thin strips.
- 4. Peel the garlic cloves.
- 5. Mince the garlic very finely.
- 6. Whisk all other marinade ingredients in a bowl.
- 7. Stir the minced garlic into the marinade.
- 8. Place the meat strips into the marinade.
- 9. Let the meat marinate for 2 hours.
- 10. Roast the peanuts in a pan without fat.
- 11. Let the roasted peanuts cool down completely.
- 12. Crush the cooled peanuts finely in a mortar.
- 13. Put the coconut milk, peanut butter, and curry into a pot.
- 14. Bring the mixture to a boil in the pot.
- 15. Stir the crushed peanuts into the boiling sauce.
- 16. Season the sauce with lemon juice and sugar.
- 17. Simmer the sauce briefly if needed until it thickens.
- 18. Add a little water if the sauce is too thick.
- 19. Fill the finished sauce into small bowls.
- 20. Sprinkle the sauce with chopped peanuts.
- 21. Drain the marinade from the meat.
- 22. Thread the meat strips onto wooden skewers in a wavy pattern.
- 23. Place the skewers on a grill rack.
- 24. Preheat the grill.
- 25. Grill the skewers for approx. 10 minutes on the hot grill.
- 26. Turn the skewers occasionally while grilling.
- 27. Brush the skewers repeatedly with the marinade in between.
- 28. Serve the grilled skewers with the peanut sauce.
