🍽️ Honey-Soy Chicken with Lemon Rice

Ingredients
- 2 tbsp tomato paste
- 1 tsp liquid honey
- 3 tbsp light soy sauce
- pepper
- 800 g chicken drumsticks (4 chicken drumsticks)
- 1 lemon
- 1 garlic clove
- 50 g onions (1 onion)
- 600 ml classic vegetable broth
- 1 tsp dried thyme
- 250 g long-grain rice
- 30 g black olives (pitted)
- 30 g green olives (pitted)
Instructions
- 1. Whisk tomato paste, two tablespoons of water, honey, soy sauce, and a pinch of pepper in a small bowl until smooth.
- 2. Line a baking tray with baking paper.
- 3. Remove the skin from the chicken drumsticks and place them on the prepared tray.
- 4. Brush the chicken drumsticks evenly with the marinade.
- 5. Let the chicken drumsticks marinate for ten minutes.
- 6. Preheat the oven to 180 degrees Celsius conventional heat (160 degrees Celsius fan-forced or gas mark 2 to 3).
- 7. Bake the chicken drumsticks in the preheated oven for 35 to 40 minutes until golden brown and cooked through.
- 8. Rinse a lemon under hot water and dry it thoroughly.
- 9. Peel a thin layer of zest from one-third of the lemon using a vegetable peeler.
- 10. Cut the lemon zest into thin strips.
- 11. Peel one clove of garlic and one onion.
- 12. Halve the onion and slice it into thin strips.
- 13. Finely chop the garlic.
- 14. Add the onion strips, chopped garlic, and lemon zest to a pot.
- 15. Pour in vegetable broth and add fresh thyme sprigs.
- 16. Bring the mixture in the pot to a boil.
- 17. Add the rice to the pot and bring everything to a boil again.
- 18. Reduce the heat, cover the pot, and let the rice simmer for about 15 minutes.
- 19. Drain the olives.
- 20. Cut the olives into slices.
- 21. Remove the rice from the heat and stir in the olive slices.
- 22. Season the rice to taste with salt and pepper.
- 23. Remove the baked chicken drumsticks from the oven.
- 24. Serve the rice on plates and place the chicken drumsticks on top.
- 25. Slice the remaining lemon into thin rounds.
- 26. Garnish the chicken drumsticks with the lemon slices.
