  1. 1. Whisk tomato paste, two tablespoons of water, honey, soy sauce, and a pinch of pepper in a small bowl until smooth.
  2. 2. Line a baking tray with baking paper.
  3. 3. Remove the skin from the chicken drumsticks and place them on the prepared tray.
  4. 4. Brush the chicken drumsticks evenly with the marinade.
  5. 5. Let the chicken drumsticks marinate for ten minutes.
  6. 6. Preheat the oven to 180 degrees Celsius conventional heat (160 degrees Celsius fan-forced or gas mark 2 to 3).
  7. 7. Bake the chicken drumsticks in the preheated oven for 35 to 40 minutes until golden brown and cooked through.
  8. 8. Rinse a lemon under hot water and dry it thoroughly.
  9. 9. Peel a thin layer of zest from one-third of the lemon using a vegetable peeler.
  10. 10. Cut the lemon zest into thin strips.
  11. 11. Peel one clove of garlic and one onion.
  12. 12. Halve the onion and slice it into thin strips.
  13. 13. Finely chop the garlic.
  14. 14. Add the onion strips, chopped garlic, and lemon zest to a pot.
  15. 15. Pour in vegetable broth and add fresh thyme sprigs.
  16. 16. Bring the mixture in the pot to a boil.
  17. 17. Add the rice to the pot and bring everything to a boil again.
  18. 18. Reduce the heat, cover the pot, and let the rice simmer for about 15 minutes.

  20. 20. Cut the olives into slices.
  21. 21. Remove the rice from the heat and stir in the olive slices.
  22. 22. Season the rice to taste with salt and pepper.
  23. 23. Remove the baked chicken drumsticks from the oven.

  25. 25. Slice the remaining lemon into thin rounds.
  26. 26. Garnish the chicken drumsticks with the lemon slices.
