🍽️ Fresh Fava Beans with Celery and Lemon

Ingredients
- 300 g broad beans (frozen)
- 2 small onions
- 1 clove of garlic
- 3 tbsp olive oil
- 100 g celery stalks
- 40 g Parmesan
- 0.5 lemon
- salt
- pepper
Instructions
- 1. Let the frozen fava beans thaw.
- 2. Pour boiling water over the beans in a bowl.
- 3. Let the beans steep in the hot water for a short time.
- 4. Drain the beans in a colander.
- 5. Rinse the beans under cold water.
- 6. Carefully remove the green bean kernels from their pale skins.
- 7. Peel the onions.
- 8. Dice the onions into very small cubes.
- 9. Peel the garlic cloves.
- 10. Finely chop the garlic.
- 11. Heat one tablespoon of olive oil in a pan.
- 12. Add the onions and garlic to the hot pan.
- 13. Sauté the vegetables over medium heat.
- 14. Stir frequently.
- 15. Cook for two to three minutes until translucent.
- 16. Add the prepared fava beans to the pan.
- 17. Pour in five tablespoons of water.
- 18. Cover the pan with a lid.
- 19. Cook the beans over medium heat for three to four minutes.
- 20. Remove the fava beans from the pan.
- 21. Place the beans in a separate bowl.
- 22. Wash the celery stalks thoroughly.
- 23. Remove the stringy fibers from the celery.
- 24. Set aside the green celery leaves.
- 25. Slice the celery into very thin slices.
- 26. Add the celery slices to the bowl with the beans.
- 27. Shave thin slices of Parmesan cheese using a peeler.
- 28. Squeeze the lemon directly over the vegetables.
- 29. Add the Parmesan slices to the vegetable mix.
- 30. Add the remaining olive oil.
- 31. Season the mixture generously with salt.
- 32. Season the mixture generously with pepper.
- 33. Mix all ingredients thoroughly.
- 34. Let the marinade sit for fifteen to twenty minutes.
- 35. Wash the saved celery leaves.
- 36. Shake the leaves dry.
- 37. Chop the celery leaves coarsely.
- 38. Fold the celery leaves into the bean and celery mixture.
- 39. Taste and adjust seasoning with salt and pepper if needed.
- 40. Serve the dish.
