🍽️ Marinated Artichokes with Garlic

Ingredients
- 1 kg artichokes
- 1 lemon (juice)
- 150 ml wine vinegar
- 1 tbsp salt
- 1 tbsp sugar
- 1 tsp peppercorns
- 1 bay leaf
- 5 sprigs thyme
- 5 garlic cloves
- 400 ml olive oil
Instructions
- 1. Cut off the tough outer leaves and the tips of the artichokes.
- 2. Remove the fuzzy choke in the center, if present.
- 3. Cut off the stems of the artichokes.
- 4. Place the cleaned artichokes immediately in cold water with lemon juice.
- 5. Bring vinegar with 300 milliliters of water, salt, sugar, pepper, and a bay leaf to a boil.
- 6. Simmer the artichokes in the broth for about 25 minutes.
- 7. Remove the artichokes from the broth and let them cool.
- 8. Mix the cooled artichokes with the herbs and the chopped garlic.
- 9. Fill the mixture into jars.
- 10. Pour oil over everything until it is completely covered.
- 11. Seal the jars tightly.
- 12. Store the jars in a cool and dark place.
