  1. 1. Cut off the tough outer leaves and the tips of the artichokes.
  2. 2. Remove the fuzzy choke in the center, if present.
  3. 3. Cut off the stems of the artichokes.
  4. 4. Place the cleaned artichokes immediately in cold water with lemon juice.
  5. 5. Bring vinegar with 300 milliliters of water, salt, sugar, pepper, and a bay leaf to a boil.
  6. 6. Simmer the artichokes in the broth for about 25 minutes.
  7. 7. Remove the artichokes from the broth and let them cool.
  8. 8. Mix the cooled artichokes with the herbs and the chopped garlic.
  9. 9. Fill the mixture into jars.
  10. 10. Pour oil over everything until it is completely covered.
  11. 11. Seal the jars tightly.
  12. 12. Store the jars in a cool and dark place.
