  3. 3. Cut off the hard tips of the leaves.
  4. 4. Cut the artichokes in half lengthwise, then into quarters.
  5. 5. Bring water to a boil with salt and lemon juice.
  6. 6. Cook the artichokes in the water for about 20 minutes.
  7. 7. Let the artichokes drain.
  8. 8. Whisk vinegar, oil, salt, and pepper together to make a sauce.
  9. 9. Stir thyme into the sauce.
  10. 10. Let the artichokes marinate in the sauce for a while.
  11. 11. Serve the artichokes with baguette.
