  2. 2. Gently pull off the tough outer leaves.
  3. 3. Keep the artichoke stem long.
  4. 4. Peel the tough outer skin from the stem.
  5. 5. Cut each artichoke into four equal pieces.
  6. 6. Immediately drizzle the cut surfaces with lemon juice to prevent browning.
  7. 7. Crush the unpeeled garlic cloves flat with the palm of your hand until they split slightly.
  8. 8. Heat 6 tablespoons of olive oil in a large pot.
  9. 9. Add the artichoke pieces and garlic to the hot oil.
  10. 10. Season everything with salt and generously with coarsely ground pepper.
  11. 11. Deglaze everything with 125 milliliters of water.
  12. 12. Add the fresh parsley sprigs to the pot.
  13. 13. Cover the pot with a lid.
  14. 14. Simmer the artichokes over medium heat for 15 minutes.
