Ingredients
- 8 artichokes
- olive oil
- salt
- pepper (from the mill)
- 2 lemons (juice)
- 5 garlic cloves
- 2 sprigs parsley
Instructions
- 1. Rinse the artichokes under running water.
- 2. Gently pull off the tough outer leaves.
- 3. Keep the artichoke stem long.
- 4. Peel the tough outer skin from the stem.
- 5. Cut each artichoke into four equal pieces.
- 6. Immediately drizzle the cut surfaces with lemon juice to prevent browning.
- 7. Crush the unpeeled garlic cloves flat with the palm of your hand until they split slightly.
- 8. Heat 6 tablespoons of olive oil in a large pot.
- 9. Add the artichoke pieces and garlic to the hot oil.
- 10. Season everything with salt and generously with coarsely ground pepper.
- 11. Deglaze everything with 125 milliliters of water.
- 12. Add the fresh parsley sprigs to the pot.
- 13. Cover the pot with a lid.
- 14. Simmer the artichokes over medium heat for 15 minutes.
- 15. Let the artichokes cool in the pot.
- 16. Serve the marinated artichokes.
