  1. 1. Peel the garlic cloves and chop them roughly.
  2. 2. Add the mustard, lemon juice, lemon zest, Tabasco, thyme, beer, and some pepper to a blender.
  3. 3. Blend all ingredients until you have a smooth marinade.
  4. 4. Place the steaks into the marinade.
  5. 5. Cover the bowl and refrigerate for at least 5 hours, or preferably overnight.
  6. 6. Remove the steaks from the marinade and let them drain well.
  7. 7. Preheat the grill.
  8. 8. Grill the steaks on the hot grill for 3 to 4 minutes on each side.
  9. 9. Season the steaks with salt after grilling.
  10. 10. Serve the steaks with toasted baguette and herb butter as desired.
