  2. 2. Add the salt, egg yolks, and flour to the potato mixture.
  3. 3. Knead everything into a pliable dough that is not too firm.
  4. 4. Dust a cutting board with some flour and roll out the dough thinly.
  5. 5. Pour boiling water over the apricots to blanch them (cook briefly in boiling water).
  6. 6. Peel the skin off the apricots and remove the pits.
  7. 7. Cut a sugar cube in half.
  8. 8. Fill each apricot with half a sugar slice.
  9. 9. Cut the dough into square pieces with a side length of five centimeters.
  10. 10. Place a filled apricot in the center of a dough square.
  11. 11. Fold the dough around the apricot and shape a firm dumpling.
  12. 12. Place the dumplings in a pot of boiling, salted water.
  13. 13. Let the dumplings cook for about fifteen to twenty minutes.

  15. 15. Toast the breadcrumbs in the hot butter until golden brown.
