🍽️ Juicy Apricot Dumplings with Caramelized Breadcrumbs

Ingredients
- 1 kg mealy, pre-cooked potatoes
- 3 egg yolks
- flour (as needed)
- 800 g apricots
- 1 pinch salt
- salt water (for boiling)
- 150 g butter
- 150 g breadcrumbs
- powdered sugar (for dusting)
Instructions
- 1. Peel the potatoes and press them through a potato ricer.
- 2. Add the salt, egg yolks, and flour to the potato mixture.
- 3. Knead everything into a pliable dough that is not too firm.
- 4. Dust a cutting board with some flour and roll out the dough thinly.
- 5. Pour boiling water over the apricots to blanch them (cook briefly in boiling water).
- 6. Peel the skin off the apricots and remove the pits.
- 7. Cut a sugar cube in half.
- 8. Fill each apricot with half a sugar slice.
- 9. Cut the dough into square pieces with a side length of five centimeters.
- 10. Place a filled apricot in the center of a dough square.
- 11. Fold the dough around the apricot and shape a firm dumpling.
- 12. Place the dumplings in a pot of boiling, salted water.
- 13. Let the dumplings cook for about fifteen to twenty minutes.
- 14. Heat some butter in a frying pan.
- 15. Toast the breadcrumbs in the hot butter until golden brown.
- 16. Lift the finished dumplings out of the water with a slotted spoon.
- 17. Let the dumplings drain briefly.
- 18. Toss the dumplings in the toasted breadcrumbs until completely covered.
- 19. Place the dumplings on a pre-warmed serving plate.
- 20. Finally, dust the finished dumplings with powdered sugar.
