🍰 Classic Margarete Cake

Ingredients
- 200 g Butter
- 100 g marzipan paste
- 140 g sugar
- 6 eggs
- 0.5 vanilla pod (seeds)
- 80 g cornstarch
- 120 g flour
- 100 g apricot jam
- 100 g red currant jelly
Instructions
- 1. Knead butter, marzipan raw mass, and one-third of the sugar into a smooth dough. Place the mixture in a bowl. Separate the eggs. Stir vanilla paste and the egg yolks into the butter-marzipan mixture one after the other.
- 2. Whip the egg whites until stiff and slowly pour in the remaining sugar. Gently fold one-third of the egg whites into the mixture, then the rest. Mix flour and starch and fold them into the mixture.
- 3. Grease a Margarete cake pan or a springform pan (26 cm diameter). Fill the pan with the dough and smooth the surface.
- 4. Bake the cake in the preheated oven (electric oven: 200°C, gas oven: level 3) for 55 to 60 minutes.
- 5. Let the cake cool slightly in the pan. Carefully remove it and let it cool completely on a wire rack.
- 6. Warm apricot jam with 2 tablespoons of water. Strain the warm mixture through a sieve and brush the cake thinly with it. Let the glaze set.
- 7. Warm red currant jelly and decorate the center of the cake with it. Let the cake cool.
