  2. 2. Scoop out the pulp along with the seeds from the shells using a spoon.
  3. 3. Set aside two tablespoons of the fruit mixture with seeds.
  4. 4. Pour the remaining juice through a fine mesh sieve to remove all seeds.
  5. 5. Separate the eggs so you have distinct yolks and whites.
  6. 6. Whisk the egg yolks until smooth with the mascarpone cream.
  7. 7. Mix the mass with the quark (a type of fresh curd cheese).
  8. 8. Add the powdered sugar to the mixture and stir well.
  9. 9. Fold in the two tablespoons of reserved passion fruit seeds.
  10. 10. Stir everything together with the strained fruit juice.
  11. 11. Beat the egg whites together with the orange juice until stiff peaks form.
  12. 12. Gently fold the whipped egg whites into the fruit cream.
  13. 13. Fill the cream into a piping bag fitted with a star tip.
  14. 14. Serve the cream as desired in small cups.
